You can port forward via a proxy or use a VPN, but both still create traceable signatures. Depending on your country's restrictions, they may or may not really care.

I doubt any country's gonna send people after you for playing a game, but they might add you to a list of some sort and use it to paint you as a subversive if you do anything else questionable.

You can also stream the game from Shadow.tech or similar, where the game runs on their computers and the multiplayer network goes from their data center out to the world, so there's no direct Minecraft connection from your computer to any other. Your network traffic is just to send controller inputs to and receive pixels from the stream provider.
